Sugar-free homemade truffles

Just a quick recipe I made up while on a Daniel Fast a few weeks ago. 
It is a truffle made without sugar and gluten, and is fast and easy, so here goes!

Ingredients:

  • one large mejool date
  • cinnamon
  • vanilla extract
  • unsweetened cocoa powder
What You Do:
  1. Take the pit out of the date if needed. Mash up the date until there are few to no large clumps. 
  2. Add a splash of vanilla extract to the mashed date. (about 1/4 tsp is good)
  3. Sprinkle in about 1 teaspoon of cinnamon. You can add more or less to taste. Mix in 1-2 tsp cocoa powder.
  4. Roll the mixture using the palm of your hand and roll it in a circular motion, forming a ball. The dough should be of a playdough like consistency.
  5. Final step! Roll the ball in the cocoa powder for a finishing touch!
